Soup is one of our favorite meals in the fall and winter. Black bean soup is one my girls ask me to make on a regular basis. Not only is it delicious, but it is extremely good for you.
3/4 cup chopped carrots
3/4 cup chopped celery
3/4 cup chopped onion
2-3 tbsp chopped garlic
2-3 tbsp butter
Sautee these veggies in a large pot until cooked thoroughly.

1/4 – 1/3 cooking sherry
2 tsp dried cilantro (or 1/4 c. chopped fresh)
Simmer for 5-10 minutes, allowing flavor of sherry to combine with veggies.

1 can Rotel, with liquid
Simmer for 5 more minutes.

3 cans black beans, with liquid
Simmer an additional 20-30 minutes.

Serve alone or with any of the following: shredded cheddar, sour cream, tostido chips
This soup is also delicious cold as a dip for chips!
